  • 1/2 cup reduced-sodium chicken broth
  • 4 ounces diced pimientos drained, jarred
  • 1 tablespoon Louisiana-style hot sauce use 2 tablespoons for more heat
  • 1/4 teaspoon onion salt
  • 1/4 teaspoon pepper
  • 2 pounds large shrimp uncooked, peeled and deveined
  • 5-2/3 cups hot cooked rice for serving

Method
 

  1. In a large skillet, cook the onion and green pepper in olive oil until they become tender.
  2. Add the minced garlic and cook for 1 minute more.

  4. Bring the mixture to a boil. Reduce the heat, cover the skillet, and simmer for 10 minutes, stirring sometimes.
  5. Stir in the shrimp. Cook for 5 to 7 minutes longer, or until the shrimp turn pink.
  6. Serve the shrimp mixture with hot cooked rice.
