Ingredients
  

For the Salsa
  • 4 cups seedless watermelon diced
  • 1/2 cup red onion finely diced
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice freshly squeezed
  • 1/4 teaspoon salt or to taste

Method
 

  1. In a large bowl, combine the diced watermelon, red onion, jalapeño, and cilantro.
  2. Drizzle with fresh lime juice and season with salt.
  3. Gently toss to combine all ingredients.
  4. Taste and adjust seasoning if needed.
  5. Serve immediately or chill for later. This salsa is best served within a few hours of making.

Notes

For best results, use chilled watermelon. If you prefer a milder salsa, remove all seeds and membranes from the jalapeño. This salsa is a great accompaniment to grilled chicken, fish, or pork tacos.
