Watermelon Chia Parfait

Ingredients
  

For the Chia Pudding
  • 1/2 cup chia seeds
  • 2 cups almond milk or other milk
  • 2 tbsp maple syrup or to taste
For the Watermelon Layer
  • 2 cups cubed watermelon seedless
For the Fruit Topping
  • 1 cup mixed berries fresh or frozen
  • 1/2 cup chopped fresh fruit e.g., mango, kiwi

Method
 

  1. Make the chia pudding: In a bowl, whisk together chia seeds, almond milk, and maple syrup. Let it sit for 5 minutes, then whisk again to prevent clumping. Cover and refrigerate for at least 2 hours, or until thickened.
  2. Prepare the watermelon: In a blender, puree the cubed watermelon until smooth.
  3. Assemble the parfaits: Spoon a layer of watermelon puree into the bottom of each serving glass. Top with a layer of chia pudding. Add another layer of watermelon puree, followed by a layer of chia pudding.
  4. Garnish with mixed berries and chopped fresh fruit.
  5. Serve immediately or chill until ready to serve.

Notes

You can adjust the sweetness of the chia pudding to your preference. Feel free to use any combination of fruits you like for the topping.
