  • 1 large watermelon about 10-12 inches in diameter, rind removed, sliced into 1-inch thick rounds
For the Topping
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup mixed berries fresh or frozen, thawed (e.g., strawberries, blueberries, raspberries)
  • 1/4 cup kiwi sliced
  • 1/4 cup mandarin orange segments drained
  • 2 tbsp shredded coconut optional

Method
 

  1. Prepare the watermelon base: Cut the watermelon into a large round, about 1-inch thick. Place it on a large plate or serving platter.
  2. Make the cream cheese frosting: In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Spread the frosting: Evenly spread the cream cheese mixture over the top of the watermelon round, leaving a small border.
  4. Add the fruit toppings: Arrange the mixed berries, kiwi slices, and mandarin orange segments decoratively over the cream cheese frosting.
  5. Garnish and chill: Sprinkle with shredded coconut, if desired. Cover the fruit pizza and refrigerate for at least 30 minutes before serving.
  6. Serve: Slice the watermelon berry fruit pizza into wedges and serve immediately.

Notes

You can customize the fruit toppings based on what is in season or your preferences. Ensure the watermelon is well-drained before topping to prevent a watery base.
