Ultra Creamy Garlic Mashed Potatoes

This recipe provides instructions for making ultra creamy garlic mashed potatoes using either a stovetop or an Instant Pot method. You can leave the skins on the red potatoes for added texture and nutrients.

Ingredients
  

Potatoes
  • 3 pounds red potatoes, peeled if desired
Flavorings and Dairy
  • 4 tablespoons butter
  • 8 ounces sour cream
  • 1/2 cup whole milk
  • 1 tablespoon minced garlic
  • 1 teaspoon garlic powder Adjust to taste (1-2 teaspoons)
  • 1 teaspoon salt Adjust to taste (1-2 teaspoons)
  • 1/4 teaspoon cracked black pepper Or 1/8 teaspoon ground black pepper

  • Potato masher or hand mixer
  • Instant Pot (optional)

Method
 

  1. Cook the potatoes using the stovetop or Instant Pot method described below.
  2. In a large bowl, combine the hot, drained potatoes, butter, milk, sour cream, garlic, garlic powder, salt, and pepper.
  3. Mix the potatoes using a potato masher or a hand mixer until all ingredients are combined. Mix only until combined; leave a few small lumps and do not over-mix.
  4. Taste the potatoes and add more salt and pepper if necessary. Serve immediately.
  5. Stovetop Method: Cut the potatoes into quarters. Place them in a large pot and cover with water so the water is 1 inch above the potatoes. Bring the water to a boil over high heat. Reduce the heat to medium-high and boil for 10 to 12 minutes, or until a fork easily pierces the center of the potatoes. Drain the water and move the potatoes to a large bowl.
  6. Instant Pot Method: Place a metal rack in the bottom of your pressure cooker. Add 1 cup of water, then place the potatoes on the metal rack. Cover the pot and set the vent to the SEAL position. Set the cooker to PRESSURE COOK or MANUAL for 8 minutes. When the cook time finishes, quick release the pressure by turning the knob to the VENT position. Once the float valve drops, remove the lid, drain the water, and transfer the potatoes to a large bowl.

Notes

You can use red potatoes and leave the skins on; the skins are soft and add flavor. If you prefer to peel them, you may do so first. For a stronger garlic taste, use 1 1/2 to 2 teaspoons of garlic powder.
