Ultimate Breakfast Poutine with Creamy Hollandaise Sauce

This recipe takes a classic Canadian dish and transforms it into a rich breakfast experience. You will combine crispy baked potatoes with scrambled eggs, bacon, sausage, and cheese curds, all topped with a homemade creamy hollandaise sauce.

Ingredients
  

Potatoes
  • 1/2 package frozen tater tots (28 ounce)
  • 1/2 package frozen French fries (28 ounce)
Hollandaise Sauce
  • 3 egg yolks
  • 1/2 lemon, juiced
  • 1/2 cup unsalted butter, melted and clarified (1 stick)
  • 1 pinch cayenne pepper
  • 1-3 tablespoons chicken stock, warmed optional
  • to taste salt and pepper
Scrambled Eggs
  • 3 tablespoons unsalted butter
  • 4 large eggs, beaten
  • to taste salt and pepper
Assembly
  • 6 slices crisp cooked bacon, crumbled
  • 8 ounces breakfast sausage, cooked and crumbled
  • 8 ounces cheddar cheese curds
  • 2 thinly sliced green onions

Method
 

  1. Preheat your oven to 425˚F.
  2. Spread the tater tots and French fries in a single layer on 2 baking sheets. Bake for 25 to 30 minutes, or until the tots and fries have browned and crisped.
  3. To make the hollandaise sauce: Place the egg yolks and lemon juice into a heatproof bowl and whisk until the mixture doubles in volume. Place this bowl over a pot with simmering water, making sure the water does not touch the bottom of your bowl, and begin whisking. While whisking, slowly add the melted butter in a steady stream until fully incorporated and the hollandaise is thick and smooth. Add cayenne and season with salt and pepper. Remove from heat, cover the surface directly with plastic wrap, and set aside.
  4. To make the scrambled eggs: Place a nonstick pan over medium to medium-low heat and melt the butter. Add the eggs and begin stirring with a rubber spatula. Continue to stir until small curds form and the eggs just set. Lightly season with salt and pepper.
  5. To assemble: Toss together the tots, fries, eggs, bacon, sausage, and cheese curds. Spread this mixture onto a baking sheet. Place under the broiler for 1 minute or until the curds melt.
  6. Remove the poutine from the broiler, drizzle with hollandaise, and finish with a sprinkle of sliced green onions. Serve immediately.
