Turkey and Crunchy Veggie Wraps

Ingredients
  

For the Wraps
  • 2 whole wheat tortillas
  • 4 oz sliced turkey breast
  • 2 tbsp hummus
For the Veggies
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup thinly sliced red bell pepper
  • 1/4 cup spinach leaves

  • Cutting board

Method
 

  1. Lay out the tortillas flat.
  2. Spread 1 tablespoon of hummus evenly over each tortilla.
  3. Layer the sliced turkey breast over the hummus on each tortilla.
  4. Top the turkey with shredded carrots, sliced cucumber, sliced red bell pepper, and spinach leaves.
  5. Fold in the sides of each tortilla, then tightly roll them up from the bottom.
  6. Let the wraps rest for 5 minutes before slicing in half, if desired.

Notes

You can add other vegetables like shredded lettuce, sliced tomatoes, or avocado. For a different flavor, try mustard or a light vinaigrette instead of hummus.
