  • 4 hot dog buns or kaiser rolls, split

  • salt and pepper to taste
  • 2 green onions, chopped
  • 1 rib celery, finely chopped
  • 1.5 pounds cooked and cubed lobster meat
  • 1 pinch dried basil, parsley or tarragon

Method
 

  1. Lightly butter the insides of the buns and line them with lettuce leaves. Set the buns aside.
  2. Stir mayonnaise, lime juice, hot pepper sauce, salt, and pepper together in a medium bowl until the mixture is blended. Mix in the green onions and celery.
  3. Gently fold in the lobster meat until it is just coated with the sauce mixture.
  4. Stuff the lobster mixture into the prepared buns. Sprinkle with basil, parsley, or tarragon.
  5. Serve immediately.
