Ingredients
  

For the Sandwich
  • 1 english muffin cut in half
  • 2 eggs
  • 2-4 slices ham Black Forest or preferred type
  • 1/3 cup cheese finely shredded, Mexican blend recommended
  • 1 tsp chives finely chopped
  • 1 Tbsp olive oil or butter for sauteing
  • to taste Salt and Pepper

Equipment

  • Skillet or frying pan
  • Spatula

Method
 

  1. Toast the English muffin halves while you prepare the rest of the ingredients.
  2. Heat the olive oil or butter in a skillet over medium heat. If you are making two sandwiches, you may need to cook the eggs in two batches.
  3. Crack the eggs into the pan. Season the eggs with salt and pepper as they cook.
  4. When the eggs are nearly set, place the ham slices on top of the eggs. Sprinkle the shredded cheese and chopped chives over the ham and eggs.
  5. Cover the pan briefly until the cheese melts. Remove the egg and ham mixture from the pan.
  6. Place the egg and ham stack onto the bottom half of the toasted English muffin. Top with the other half of the muffin to complete your sandwich.

Notes

If you are preparing two sandwiches at once, toast both English muffins separately. Cook the eggs for each sandwich in two separate batches in the same pan to manage the ingredients easily.
