Thai Basil Beef Rolls

Enjoy these spicy, sweet, tangy, and salty rolls as an appetizer or serve them with steamed rice for a quick dinner.

Ingredients
  

  • 1.5 lb ground beef (or chicken or pork)
  • to taste black pepper
  • 4 clove garlic, chopped
  • 1 tbsp fresh grated ginger or 1/4 cup candied ginger
  • 1 tsp Chinese 5 spice Use between 1 and 3 tsp
  • 1/3 cup tamari or soy sauce
  • 1/4 cup Thai chili sauce Homemade recipe in notes
  • 1/4 cup green onions, chopped Use 2 tbsp in filling, rest for topping
  • 4 Persian cucumbers, chopped
  • 2 cup cilantro, chopped
  • 1/2 cup Thai basil, chopped
  • 1/3 cup roasted peanuts, chopped
  • 8 -10 flour tortillas warmed
For Serving
  • to taste chili paste for serving
  • to taste toasted sesame oil for serving

Method
 

  1. In a large skillet, cook the beef with black pepper over medium heat. Break up the meat as it cooks until browned, about 5 minutes. Add the garlic, ginger, and Chinese 5 spice. Cook for another minute.
  2. Add the tamari and Thai chili sauce. Bring the mixture to a simmer and cook until the sauce coats the beef, 3-5 minutes. Stir in 2 tablespoons of chopped green onions. Remove the skillet from the heat.
  3. Place one tortilla at a time in the microwave for 15 seconds until warm. Spoon the beef mixture down the center of the tortilla. Top with cucumber, cilantro, basil, remaining green onion, and peanuts.
  4. Fold the tortilla over the filling. Then fold the sides and ends of the tortillas over the filling and roll forward. Repeat this process with the remaining ingredients.
  5. Serve the rolls warm with extra soy sauce, chili paste, and toasted sesame oil for dipping. Serve with rice on the side if you are making this a dinner.

As I sautéed fresh basil with tender beef, the aroma transported me back to those delightful meals. Each roll I crafted held not just flavors, but memories of laughter, the buzz of a busy kitchen, and the warmth of familial bonds.
