Tacos
  • 3 Tbsp. extra-virgin olive oil
  • 4 boneless, skinless chicken breasts, cut into 1" strips 6 to 8-oz. each
  • To taste Kosher salt
  • To taste Freshly ground black pepper
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cayenne
  • 1/4 tsp. paprika
  • 8 corn tortillas, warmed
For Serving
  • As desired Sour cream
  • As desired thinly sliced red onion
  • As desired finely chopped tomatoes
  • As desired shredded Monterey Jack
  • As desired finely chopped avocados
  • As desired finely chopped fresh cilantro
  • As desired lime wedges

Method
 

  1. Heat the oil in a large skillet over medium heat. Season the chicken strips with salt and pepper.
  2. Cook the chicken, stirring sometimes, until it is golden brown, about 6 minutes.
  3. Add the chili powder, cumin, garlic powder, cayenne, and paprika. Cook while stirring for about 1 more minute until the chicken is coated. Add more oil if the mixture becomes too dry.
  4. Divide the seasoned chicken among the warmed tortillas. Top with your desired serving ingredients.

Notes

This seasoned chicken is a good base for meal prepping taco bowls or salads for the week. The flavors hold up well when stored in the refrigerator.
