For the Taco Skillet
  • 1 pound ground beef
  • 1 onion chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 2 cups water
  • 1 cup converted rice
  • 1 (1 ounce) package taco seasoning
  • 1 cup shredded Mexican cheese blend
  • 1 cup shredded lettuce

Method
 

  1. Heat a large skillet over medium heat. Cook and stir the ground beef and onion until the beef is browned, about 5 minutes. Drain any excess fat.
  2. Stir in the diced tomatoes, water, converted rice, and taco seasoning. Bring the mixture to a boil.
  3. Reduce the heat to medium-low, cover the skillet, and simmer until the rice is tender, about 25 minutes.
  4. Top with the shredded Mexican cheese blend and shredded lettuce just before serving.
