Method
- Preheat your oven to 400°F (200°C).
- Prepare the chicken: Place each chicken breast between two pieces of plastic wrap. Use a meat mallet or rolling pin to pound them to about 1/2 inch thickness.
- Make the filling: In a medium bowl, combine the chopped spinach, softened cream cheese, grated Parmesan cheese, and minced garlic. Mix well.
- Stuff the chicken: Spoon about 1/4 of the spinach mixture onto one half of each pounded chicken breast. Fold the other half over the filling and secure with toothpicks if needed.
- Sear the chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper. Sear for 2-3 minutes per side until golden brown.
- Bake the chicken: Transfer the skillet to the preheated oven (or place chicken in a baking dish if your skillet is not oven-safe). Bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Rest and serve: Let the chicken rest for 5 minutes before slicing and serving.
Notes
You can add other ingredients to the filling, such as sun-dried tomatoes or chopped artichoke hearts.
