Stuffed Spinach Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Filling
  • 5 ounces fresh spinach chopped
  • 4 ounces cream cheese softened
  • 1/4 cup Parmesan cheese grated
  • 1 clove garlic minced

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken: Place each chicken breast between two pieces of plastic wrap. Use a meat mallet or rolling pin to pound them to about 1/2 inch thickness.
  3. Make the filling: In a medium bowl, combine the chopped spinach, softened cream cheese, grated Parmesan cheese, and minced garlic. Mix well.
  4. Stuff the chicken: Spoon about 1/4 of the spinach mixture onto one half of each pounded chicken breast. Fold the other half over the filling and secure with toothpicks if needed.
  5. Sear the chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper. Sear for 2-3 minutes per side until golden brown.
  6. Bake the chicken: Transfer the skillet to the preheated oven (or place chicken in a baking dish if your skillet is not oven-safe). Bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  7. Rest and serve: Let the chicken rest for 5 minutes before slicing and serving.

Notes

You can add other ingredients to the filling, such as sun-dried tomatoes or chopped artichoke hearts.
