Ingredients
  

Salad
  • 5 oz fresh spinach washed and dried
  • 1 cup fresh strawberries hulled and sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup pecans chopped and toasted
Dressing
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper. Set aside.
  2. In a large bowl, combine the spinach, sliced strawberries, and red onion.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Sprinkle with toasted pecans before serving.

Notes

You can add grilled chicken or shrimp for a more substantial meal.
