Spicy Garlic Chicken and Broccoli Noodle Bowls

A quick weeknight meal with chicken, broccoli, and noodles in a spicy garlic sauce.

Ingredients
  

For the Sauce
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp rice vinegar
  • 1 tbsp sriracha or more, to taste
  • 4 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tbsp cornstarch
For the Bowls
  • 1 lb boneless, skinless chicken breast cut into 1-inch pieces
  • 1 tbsp sesame oil
  • 4 cups broccoli florets
  • 8 oz ramen or udon noodles cooked according to package directions
  • sesame seeds for garnish
  • sliced green onions for garnish

Equipment

  • Large skillet or wok

  • Whisk

Method
 

  1. In a small bowl, whisk together all sauce ingredients: soy sauce, honey, rice vinegar, sriracha, garlic, ginger, and cornstarch. Set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5-7 minutes until browned and cooked through.
  3. Add the broccoli florets to the skillet with the chicken. Cook for 3-4 minutes, until the broccoli is tender-crisp.
  4. Pour the prepared sauce over the chicken and broccoli. Bring to a simmer and cook for 2-3 minutes, stirring constantly, until the sauce has thickened.
  5. Divide the cooked noodles among four bowls. Top with the chicken and broccoli mixture.
  6. Garnish with sesame seeds and sliced green onions, if desired. Serve immediately.

Notes

You can adjust the spice level by adding more or less sriracha. For a different flavor, add a splash of lime juice at the end.
