Slow Cooker White Chicken Chili

Ingredients
  

For the Chili
  • 2 lbs boneless, skinless chicken breasts
  • 2 cans cannellini beans rinsed and drained
  • 1 can diced green chilies undrained
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper optional
For Serving
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Add cannellini beans, diced green chilies, chicken broth, taco seasoning, cumin, oregano, and cayenne pepper (if using) to the slow cooker.
  3. Stir to combine.
  4. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is cooked through.
  5. Remove chicken from the slow cooker and shred with two forks. Return shredded chicken to the slow cooker.
  6. Stir the chili and let it simmer for another 60 minutes on low, uncovered, to allow flavors to meld.
  7. Serve hot, topped with shredded cheddar cheese, sour cream, and cilantro.

Notes

You can substitute other white beans, such as Great Northern beans, for the cannellini beans. For a spicier chili, add a pinch of red pepper flakes or a diced jalapeño.
