- Place chicken breasts in the slow cooker.
- Add cannellini beans, diced green chilies, chicken broth, taco seasoning, cumin, oregano, and cayenne pepper (if using) to the slow cooker.
- Stir to combine.
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is cooked through.
- Remove chicken from the slow cooker and shred with two forks. Return shredded chicken to the slow cooker.
- Stir the chili and let it simmer for another 60 minutes on low, uncovered, to allow flavors to meld.
- Serve hot, topped with shredded cheddar cheese, sour cream, and cilantro.

Notes
You can substitute other white beans, such as Great Northern beans, for the cannellini beans. For a spicier chili, add a pinch of red pepper flakes or a diced jalapeño.
