Slow Cooker Garlic Butter Beef with Potatoes

This recipe shows you how to make tender beef and potatoes in a slow cooker with a rich garlic butter sauce. It is a simple meal for dinner.

Ingredients
  

For the Beef and Potatoes
  • 2 lbs beef chuck roast cut into 1-inch cubes
  • 1.5 lbs baby potatoes halved
  • 1 large yellow onion chopped
  • 4 cloves garlic minced
  • 1/2 cup unsalted butter divided
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper to taste
For the Garnish
  • 2 tbsp fresh parsley chopped

Method
 

  1. Pat the beef cubes dry with paper towels and season with salt and pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear the beef cubes in batches until browned on all sides. Transfer the seared beef to the slow cooker.
  3. Add the remaining butter to the skillet. Sauté the chopped onion until it softens, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Pour in the beef broth and Worcestershire sauce. Scrape any browned bits from the bottom of the skillet. Bring the mixture to a simmer.
  5. Place the halved potatoes in the slow cooker with the beef. Pour the onion and broth mixture over the top. Sprinkle with thyme and rosemary.
  6. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
  7. Garnish with fresh parsley before you serve.

Notes

To make a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water. Stir this slurry into the slow cooker during the last 30 minutes of cooking. You can add other vegetables like carrots or celery with the potatoes.
