Method
- Pat the beef cubes dry with paper towels and season with salt and pepper.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear the beef cubes in batches until browned on all sides. Transfer the seared beef to the slow cooker.
- Add the remaining butter to the skillet. Sauté the chopped onion until it softens, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Pour in the beef broth and Worcestershire sauce. Scrape any browned bits from the bottom of the skillet. Bring the mixture to a simmer.
- Place the halved potatoes in the slow cooker with the beef. Pour the onion and broth mixture over the top. Sprinkle with thyme and rosemary.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
- Garnish with fresh parsley before you serve.

Notes
To make a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water. Stir this slurry into the slow cooker during the last 30 minutes of cooking. You can add other vegetables like carrots or celery with the potatoes.
