- Preheat your oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
- Roast the potatoes for 25-30 minutes, or until tender and crispy, flipping halfway through.
- While the potatoes are roasting, cook the ground beef in a large skillet over medium-high heat. Drain off any excess fat.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, chili powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally, until the sauce has thickened.
- To serve, divide the crispy potatoes among four bowls. Spoon the sloppy joe mixture over the potatoes.
