Sloppy Joe Bowls with Crispy Potatoes

A quick and easy recipe for sloppy joe bowls served over crispy roasted potatoes. This dish is perfect for a weeknight meal.

Ingredients
  

For the Crispy Potatoes
  • 1.5 lbs potatoes cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Sloppy Joe
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can (15 oz) tomato sauce
  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

  • Baking sheet
  • Large bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
  2. Roast the potatoes for 25-30 minutes, or until tender and crispy, flipping halfway through.
  3. While the potatoes are roasting, cook the ground beef in a large skillet over medium-high heat. Drain off any excess fat.
  4. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, chili powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally, until the sauce has thickened.
  6. To serve, divide the crispy potatoes among four bowls. Spoon the sloppy joe mixture over the potatoes.

Notes

You can add your favorite toppings like shredded cheese, sour cream, or chopped chives.
