Ingredients

For the Beef
  • 3 pounds beef chuck roast boneless
  • 1 packet au jus gravy mix dry
  • 1 packet dry onion soup mix dry
  • 1 cup water
For the Sandwiches
  • 6 hoagie rolls split lengthwise
  • 1 cup water for au jus
  • 1 tablespoon butter optional
  • 1 clove garlic minced, optional
  • 1 tablespoon Worcestershire sauce optional
  • 1 tablespoon soy sauce optional

Equipment

  • Slow Cooker
  • Forks
  • Cutting board
  • Knife
  • Large spoon
  • Saucepan

Method

  1. Place the beef roast in your slow cooker.
  2. In a bowl, whisk together the au jus gravy mix, dry onion soup mix, and 1 cup of water. Pour this mixture over the beef.
  3. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender and easily shreds.
  4. Remove the beef from the slow cooker and place it on a cutting board. Use two forks to shred the meat. Skim any excess fat from the liquid in the slow cooker.
  5. Return the shredded beef to the slow cooker and stir it into the liquid. Let it heat through for about 15 minutes.
  6. To prepare the au jus for dipping, pour the liquid from the slow cooker into a saucepan. Add 1 cup of water. If desired, add butter, minced garlic, Worcestershire sauce, and soy sauce. Heat over medium heat until warm.
  7. Toast the hoagie rolls lightly, if desired. Spoon the shredded beef mixture onto the bottom halves of the rolls.
  8. Serve immediately with the warm au jus for dipping.

Notes

You can add provolone cheese to the sandwiches before toasting for a French dip with cheese. For a spicier kick, add a pinch of red pepper flakes to the au jus.
