Simple French Toast

Ingredients
  

For the French Toast
  • 4 large eggs
  • 2/3 cup milk (160 ml)
  • 1/4 cup all-purpose flour (30 grams)
  • 1/4 cup granulated sugar (50 grams)
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract (5 ml)
  • 8 thick slices bread

Method
 

  1. Preheat your griddle to 350 degrees F or heat a skillet over medium heat.
  2. In a blender, combine the eggs, milk, flour, sugar, salt, cinnamon, and vanilla. Blend until smooth. Alternatively, whisk the flour and eggs together in a shallow dish, then whisk in the remaining ingredients until combined.
  3. Dip each bread slice into the batter, coating both sides well. Place the coated bread slices onto the hot, greased griddle or skillet.
  4. Cook for a few minutes until the bottom of the bread is golden brown. Flip and cook the other side until golden brown.
  5. Remove the French toast to a plate. Serve warm with syrup and a sprinkle of powdered sugar.

Notes

For the best results, use thick-sliced bread such as Texas Toast or day-old homemade bread. Cinnamon toast or brioche also work well. The flour in the batter helps create a fluffier French toast. Any type of milk can be used, but higher fat milk will result in a creamier batter. You can make the batter 1-2 days ahead. Cooled French toast can be frozen for up to 3 months and reheated on a skillet, in a toaster, or in the microwave.
