- Prepare your double boiler. Fill a small saucepan with 1-2 inches of water. Place a heatproof bowl over the saucepan, ensuring it does not touch the water.
- Add the finely chopped chocolate to the bowl, reserving about 2 tablespoons for later. Bring the water to a simmer over medium heat.
- Once the water is simmering, place the bowl of chocolate over the saucepan. Stir the chocolate constantly until it is completely melted and smooth.
- Remove the bowl from the heat. Add the reserved 2 tablespoons of chocolate to the melted chocolate and stir until it is fully incorporated and smooth. This tempering step helps prevent streaks.
- Dip the pretzel minis into the melted chocolate, ensuring they are fully coated. Transfer the dipped pretzels to a cooling rack or a baking sheet lined with wax paper. Space them so they do not touch.
- While the chocolate is still wet, you can add optional decorations. Drizzle with melted white chocolate or sprinkle with your chosen toppings like sprinkles, toffee bits, or crushed nuts.
- Allow the chocolate to harden completely before serving. You can speed up this process by placing the pretzels in the refrigerator.
