- In a small bowl, combine coleslaw mix, cilantro, lime juice, honey, salt and, if you are using it, jalapeno. Toss the mixture to coat.
- Preheat your air fryer to 375 degrees Fahrenheit. Whisk eggs and milk together in a shallow bowl. Place flour in a separate shallow bowl. In a third shallow bowl, mix panko, cumin, and garlic powder.
- Dip the shrimp into the flour to coat both sides, shaking off any excess. Dip the floured shrimp into the egg mixture, then coat thoroughly in the panko mixture, patting the coating to help it stick.
- Arrange the shrimp in a single layer on the greased tray in the air fryer basket in batches. Spritz the shrimp with cooking spray. Cook for 2 to 3 minutes until golden brown. Turn the shrimp, spritz again with cooking spray, and cook for 2 to 3 minutes longer until the shrimp turn pink.
- Serve the cooked shrimp in the warmed tortillas with the prepared coleslaw mix and sliced avocado.
