Method
 

  1. Preheat your oven to 400 degrees F.
  2. Spread the chicken strips, sliced peppers, and onion on a baking sheet that you have sprayed with cooking spray. Drizzle everything with olive oil and season with salt and pepper.
  3. In a small bowl, mix the chili powder, cumin, paprika, garlic powder, and oregano. Sprinkle this spice mixture evenly over the chicken and vegetables. Toss the ingredients to coat them, then spread them out in a single layer on the baking sheet.
  4. Bake for 20 to 25 minutes. Toss the ingredients halfway through the cooking time. Continue cooking until the vegetables are tender and the chicken is fully cooked.
  5. If you want some char on your vegetables, remove the chicken from the baking sheet and place the vegetables under the broiler for about 3 to 5 minutes until the edges start to char slightly.
  6. Remove the pan from the oven. Drizzle with lime juice and sprinkle with fresh cilantro. Serve immediately with lettuce cups or tortillas and your chosen toppings.
