Roasted Beets Side Dish

This recipe shows you how to roast beets simply so they become tender and flavorful. You can serve these roasted beets as an easy, healthy side dish for any meal.

Ingredients
  

  • 6 medium beets, tops removed, scrubbed well
  • For drizzling Extra-virgin olive oil
  • To taste Sea salt
  • To taste Freshly ground black pepper

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Place each beet on a piece of foil. Drizzle generously with olive oil and sprinkle with salt and pepper.
  3. Wrap the beets in the foil, place them on a baking sheet, and roast for 35 to 60 minutes, or until you can easily pierce them with a fork. The time depends on the size of the beets.
  4. Remove the beets from the oven, take off the foil, and let them cool down.
  5. When the beets are cool enough to handle, peel off the skins. You can hold them under running water and slide the skins off with your hands.
  6. Cut or slice the beets. Drizzle lightly with olive oil. Season with salt and pepper, toss the pieces together, and serve.

Notes

I learned that making vegetable sides taste great does not require special training, just some creativity. Roasting beets this way makes them a flavorful addition to any meal.
