Ingredients
  

For the Drink
  • 3 oz Chai tea concentrate
  • 4 oz 2% milk
  • 3 oz Pumpkin cream cold foam (recipe below)
For the Pumpkin Cream Cold Foam
  • 3/4 cup 2% milk
  • 1/4 cup Heavy cream
  • 2.5 tablespoon Pumpkin spice sauce (store-bought or recipe below)
  • 2 teaspoon Vanilla syrup (store-bought or substitute with 1 teaspoon vanilla extract)
For the Pumpkin Spice Sauce
  • 1 14 oz. can Fat-free sweetened condensed milk (use regular if fat-free is unavailable)
  • 1 cup Pumpkin puree
  • 1 tablespoon Pumpkin pie spice
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract

Equipment

  • Glass
  • Mason jar or bowl
  • Electric frother, hand mixer, or blender
  • Medium saucepan
  • Heat-proof jar or bowl

Method
 

  1. Add chai tea concentrate to an ice-filled glass. Pour milk into the glass.
  2. Top the drink with pumpkin cream cold foam and sprinkle pumpkin pie spice over the top.
  3. To make the Pumpkin Cream Cold Foam: Mix milk, cream, vanilla syrup, and pumpkin spice sauce in a mason jar and shake to combine. You can also stir all ingredients together in a bowl.
  4. Turn the sweet cream mixture into cold foam right before using. Add the sweet cream and froth, mix, or blend until the mixture becomes a foam. Alternatively, shake the mixture in a mason jar until it is frothy.
  5. To make the Pumpkin Spice Sauce: Put condensed milk in a medium saucepan over medium-low heat, along with pumpkin puree, pumpkin pie spice, and salt.
  6. Stir the ingredients together and heat for about 5 minutes, until it just starts to bubble.
  7. Remove the saucepan from the heat and stir in the vanilla extract.
  8. Pour the pumpkin spice sauce into a heat-proof jar or bowl and place it in the fridge to cool.

Notes

This recipe makes enough pumpkin spice sauce for 8 lattes. Each batch of pumpkin cream cold foam makes enough for 3 drinks. Store the cold cream in the fridge and whip it into cold foam when you are ready to make a drink.
