  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 6 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1.5 cups 4% cottage cheese
  • 1.25 cups shredded Swiss cheese

Method
 

  1. Preheat your oven to 350 degrees F.
  2. Cook the diced bacon and chopped onion in a large skillet over medium heat until the bacon is crisp. Drain the fat from the skillet.
  3. In a large bowl, combine the eggs, thawed hash browns, cheddar cheese, cottage cheese, and Swiss cheese. Stir in the cooked bacon and onion mixture.
  4. Transfer the mixture to a greased 13x9-inch baking dish.
  5. Bake the casserole uncovered for 35 to 40 minutes, or until a knife inserted into the center comes out clean.
  6. Let the casserole stand for 10 minutes before you cut and serve it.
