Refreshing Anti-Inflammatory Lemon-Blueberry Smoothie Recipe

This recipe came from a need for a quick snack that everyone in the family would enjoy and that supported good health. When I first combined lemon and blueberries, the bright color and taste were immediately popular. This smoothie provides anti-inflammatory benefits and is simple to make for busy families.

Ingredients
  

  • 1 cup frozen blueberries plus more for garnish
  • 1 medium ripe banana peeled and frozen
  • 1 cup packed baby kale
  • 1/2 cup unsweetened plain almond milk
  • 1/2 cup chilled unsweetened brewed green tea
  • 2 tablespoons hulled hemp seeds
  • 3/4 teaspoon lemon zest plus more for garnish
  • 1.5 tablespoons lemon juice
  • 1/2 teaspoon honey optional
  • 1/4 teaspoon ground ginger

Method
 

  1. Place all ingredients—frozen blueberries, frozen banana, kale, almond milk, green tea, hemp seeds, lemon zest, lemon juice, honey (if using), and ground ginger—into a blender.
  2. Blend on high speed until the mixture is completely smooth and creamy. Add a splash more liquid if the mixture is too thick to blend.
  3. Pour the smoothie into a glass.
  4. Garnish with a few extra blueberries and a sprinkle of lemon zest before serving immediately.

Notes

This smoothie is naturally gluten-free and dairy-free. If you are making this for children, you can omit the green tea and use all almond milk, or use water instead, to make the flavor milder.
