Method
- Line the bottom of a 9x13 inch baking dish with a layer of graham crackers. You may need to break some crackers to fit.
- In a large bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
- In a separate bowl, beat the softened cream cheese until smooth. Gently fold the whipped cream mixture into the cream cheese until just combined. Do not overmix.
- Spread half of the cream cheese mixture evenly over the graham cracker layer.
- Add another layer of graham crackers over the cream cheese mixture.
- Spread the remaining cream cheese mixture over the second graham cracker layer.
- Top with a layer of sliced strawberries and blueberries.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften and the flavors to meld.
- Slice and serve chilled.
Notes
For a more festive look, you can arrange the strawberries and blueberries in stripes or a star pattern. You can also add a layer of whipped cream on top before adding the fruit.
