Red White and Blue Icebox Cake

A simple no-bake dessert perfect for summer holidays.

Ingredients
  

For the Cake
  • 2 packages graham crackers about 14 crackers per package
For the Filling
  • 2 cups heavy cream cold
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 container cream cheese 8 ounce, softened
For the Topping
  • 1 cup fresh strawberries sliced
  • 1 cup fresh blueberries

Equipment

  • 9x13-inch baking dish
  • Electric mixer

Method
 

  1. Line the bottom of a 9x13 inch baking dish with a layer of graham crackers. You may need to break some crackers to fit.
  2. In a large bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
  3. In a separate bowl, beat the softened cream cheese until smooth. Gently fold the whipped cream mixture into the cream cheese until just combined. Do not overmix.
  4. Spread half of the cream cheese mixture evenly over the graham cracker layer.
  5. Add another layer of graham crackers over the cream cheese mixture.
  6. Spread the remaining cream cheese mixture over the second graham cracker layer.
  7. Top with a layer of sliced strawberries and blueberries.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften and the flavors to meld.
  9. Slice and serve chilled.

Notes

For a more festive look, you can arrange the strawberries and blueberries in stripes or a star pattern. You can also add a layer of whipped cream on top before adding the fruit.
