Ingredients
  

For the Blondies
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup white chocolate chips
  • 1/2 cup fresh or frozen raspberries

Method
 

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
  3. Beat in the egg and vanilla extract until smooth.
  4. In a separate small bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the white chocolate chips and raspberries.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs.
  9. Let the blondies cool completely in the pan on a wire rack before cutting into squares.

Notes

If using frozen raspberries, do not thaw them before adding to the batter. This helps prevent the batter from becoming too wet. For a richer flavor, you can add a pinch of cinnamon to the dry ingredients.
