- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
- Beat in the egg and vanilla extract until smooth.
- In a separate small bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the white chocolate chips and raspberries.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs.
- Let the blondies cool completely in the pan on a wire rack before cutting into squares.
Notes
If using frozen raspberries, do not thaw them before adding to the batter. This helps prevent the batter from becoming too wet. For a richer flavor, you can add a pinch of cinnamon to the dry ingredients.
