Quick Cajun Chicken Alfredo

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts chicken breasts cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning adjust to your spice preference
  • 1 tablespoon olive oil
For the Alfredo Sauce
  • 8 ounces fettuccine pasta
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • salt to taste salt
  • 1/4 cup chopped fresh parsley for garnish

Method
 

  1. Cook the fettuccine pasta according to package directions. Drain, reserving about 1/2 cup of the pasta water.
  2. While the pasta cooks, season the chicken pieces with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, black pepper, and salt. Cook, stirring, until the sauce thickens slightly, about 3-5 minutes.
  5. Return the cooked chicken to the skillet with the sauce. Add the drained fettuccine pasta. Toss everything together until the pasta and chicken are well coated in the sauce. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  6. Serve immediately, garnished with fresh parsley.

Notes

For a spicier dish, add a pinch of cayenne pepper to the sauce. You can also add sautéed mushrooms or bell peppers for extra flavor and texture.
