Ingredients
  

For the Casserole
  • 6 oz bacon diced (about 5 slices)
  • 1 cup onion finely chopped
  • 1 teaspoon minced garlic
  • 1 cup red bell pepper diced
  • 1 cup green bell pepper diced
  • 12 eggs beaten
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese (4 oz)

Method
 

  1. Preheat your oven to 350 degrees F. Grease a 9x13 inch baking dish and set it aside.
  2. In a large skillet over medium heat, cook the diced bacon until it just starts to soften.
  3. Add the minced garlic and chopped onion to the skillet with the bacon and cook until the bacon begins to brown.
  4. Add the diced red and green bell peppers. Cover the skillet and cook for 5-10 minutes, or until the vegetables are soft and the bacon is browned, stirring occasionally.
  5. Remove the skillet from the heat and let the mixture cool.
  6. In a medium bowl, whisk the beaten eggs. Add the sea salt and pepper and whisk to combine.
  7. Add the cooled bacon and vegetable mixture to the beaten eggs and stir to combine.
  8. Stir in the shredded cheddar cheese.
  9. Pour the egg mixture into the prepared baking dish and spread it evenly.
  10. Bake in the preheated oven for 25-30 minutes, or until the top is set and slightly browned.
  11. Let the casserole cool for 5 minutes before serving warm.

Ingredient Substitutions: For bacon, choose a thick-cut, flavorful variety like hickory smoked. Turkey bacon can be used, but you may need to add 1 tablespoon of olive oil to the pan when sautéing vegetables due to its lower fat content. Crumbled breakfast sausage is also a great alternative. For onions, any variety works well, including sweet, white, red, yellow, or green onions. You can use any bell pepper color; if you dislike peppers, substitute 2 cups of your favorite vegetables like broccoli, carrots, celery, or zucchini. For cheese, extra sharp cheddar is recommended, but Colby jack, Swiss, pepper jack, or mozzarella also work well. To Make it Vegetarian: Omit the bacon and use 2 tablespoons of olive oil to sauté the vegetables.
