Ingredients
  

For the French Toast
  • 1 loaf French bread or brioche cut into 1″ thick slices, then into thirds
  • 4 large eggs
  • 2/3 cup milk
  • 1/2 cup pumpkin puree
  • 1 1/2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
For the Cinnamon Sugar Coating
  • 1/4 cup sugar
  • 1 1/2 tsp cinnamon

  • Small rectangular baking dish

Method
 

  1. Prepare the cinnamon sugar coating. In a small rectangular baking dish, combine the sugar and cinnamon. Set aside.
  2. Prepare the egg mixture. In another small rectangular baking dish, whisk together the eggs, milk, pumpkin puree, vanilla extract, cinnamon, and pumpkin pie spice.
  3. Heat a large non-stick skillet over medium heat. Add a small amount of butter and melt.
  4. Dip the bread slices into the egg mixture, ensuring both sides are coated. Place the coated bread slices onto the hot skillet.
  5. Cook for about 2 minutes on each side, until golden brown. Remove the cooked French toast sticks from the skillet.
  6. Immediately roll the warm French toast sticks in the cinnamon sugar mixture. Serve hot with maple syrup or buttered pecan syrup.

Notes

For a gluten-free option, use your favorite gluten-free bread. You can prepare the cinnamon sugar mixture and the egg mixture ahead of time and store them in the refrigerator. This recipe is also great for make-ahead holiday treats.
