Potsticker Noodle Bowl with Pork & Cabbage Slaw

Ingredients
  

For the Pork & Noodles
  • 10 oz ground pork
  • 6 oz ramen noodles
  • 3 tbsp soy sauce divided
  • 1 tbsp minced ginger
  • 2 cloves garlic minced
  • 1 tsp sesame oil
For the Slaw & Garnish
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 2 scallions thinly sliced
  • 1 tbsp rice vinegar
  • 1 tsp sesame seeds for garnish

Method
 

  1. Cook the noodles according to package directions. Drain and set aside.
  2. In a mixing bowl, combine the shredded cabbage, shredded carrots, scallions, rice vinegar, and 1 tablespoon of soy sauce. Toss to combine and set the slaw aside.
  3. Heat a large skillet over medium-high heat. Add the ground pork and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  4. Add the minced ginger and garlic to the skillet with the pork. Cook for 1 minute until fragrant.
  5. Stir in the remaining 2 tablespoons of soy sauce and the sesame oil. Add the cooked noodles to the skillet and toss to combine everything.
  6. Divide the pork and noodle mixture between two bowls. Top with the cabbage slaw and garnish with sesame seeds before serving.

Notes

You can add a small amount of chili garlic sauce to the pork for a spicy version. Sliced cucumbers also make a good addition to the slaw.
