Pizza Dough
  • 2 loaves fresh or frozen pizza dough thawed, 1 pound each
Toppings and Sauce
  • 3 tablespoons olive oil divided
  • 1 can whole tomatoes 28 ounces, drained and crushed
  • 1 medium onion finely chopped
  • 1 can anchovy fillets 2 ounces, drained and broken into 1/4-inch pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup soft bread crumbs
  • Fresh torn basil leaves for garnish

Method
 

  1. Preheat your oven to 425 degrees F. Grease a 15x10x1-inch baking pan.
  2. Press the dough to fit the bottom of the pan and extend 1/2 inch up the sides.
  3. Brush the dough with 2 tablespoons of the oil. Top the dough with the crushed tomatoes, chopped onion, and anchovy pieces.
  4. Sprinkle the mozzarella cheese over the toppings.
  5. Combine the bread crumbs with the remaining 1 tablespoon of oil. Sprinkle this mixture over the cheese layer.
  6. Bake the pizza on a lower oven rack until the edges are golden brown and the cheese is melted, which takes 20 to 25 minutes.
  7. Sprinkle fresh basil leaves over the pizza before you serve it.
