Ingredients
  

For the Cake
  • 1.5 cup all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 0.5 cup milk
  • 1 tsp vanilla extract
For the Peaches
  • 3 large peaches peeled, pitted, and sliced
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon

Method
 

  1. Preheat your oven to 350°F (175°C). Butter a 10-inch cast iron skillet.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Spread the batter evenly into the prepared skillet.
  7. Arrange the sliced peaches over the batter.
  8. In a small bowl, combine 2 tablespoons of sugar and the cinnamon. Sprinkle this mixture over the peaches.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Let the cake cool in the skillet for at least 10 minutes before serving.

Notes

Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
