Ingredients

For the Peaches
  • 2 large peaches ripe, pitted and sliced
  • 1 tablespoon butter melted
  • 1 tablespoon brown sugar
For the Brie
  • 1 wheel brie cheese about 8 ounces
For the Pecans
  • 1/2 cup pecans chopped
  • 1 teaspoon maple syrup
For Serving

Equipment

  • Baking sheet
  • small saucepan
  • Knife
  • Cutting board

Method

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, toss the sliced peaches with melted butter and brown sugar. Arrange the peaches in a single layer on one side of the prepared baking sheet.
  3. Place the wheel of brie cheese on the other side of the baking sheet. You can score the top of the brie lightly if desired.
  4. In a separate small bowl, toss the chopped pecans with maple syrup. Sprinkle the candied pecans over the brie.
  5. Bake for 15-20 minutes, or until the brie is softened and melty, and the peaches are tender. The pecans should be lightly toasted.
  6. Carefully transfer the baked brie and peaches to a serving platter. Serve immediately with sliced baguette for dipping.

Notes

You can substitute other nuts like walnuts or almonds for the pecans. If fresh peaches are not in season, you can use canned or frozen peaches, drained well.
