Peach Crumble Bars

These peach crumble bars feature a buttery oat topping and a sweet peach filling. They are perfect for a dessert or snack.

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking pan.
  2. In a medium bowl, combine the flour, rolled oats, 3/4 cup sugar, and salt for the crust and topping. Pour in the melted butter and mix until combined and crumbly.
  3. Press about two-thirds of the oat mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. In a separate bowl, gently toss the sliced peaches with 1/4 cup sugar, cornstarch, lemon juice, and cinnamon for the filling.
  5. Spread the peach filling evenly over the crust in the pan.
  6. Sprinkle the remaining oat mixture evenly over the peach filling to create the topping.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the bars cool completely in the pan on a wire rack before cutting into 12 bars.

Notes

You can use frozen peaches, but do not thaw them before using. Adjust baking time if needed. For a richer flavor, you can add a pinch of nutmeg to the topping mixture.
