Method
- Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking pan.
- In a medium bowl, combine the flour, rolled oats, 3/4 cup sugar, and salt for the crust and topping. Pour in the melted butter and mix until combined and crumbly.
- Press about two-thirds of the oat mixture evenly into the bottom of the prepared baking pan to form the crust.
- In a separate bowl, gently toss the sliced peaches with 1/4 cup sugar, cornstarch, lemon juice, and cinnamon for the filling.
- Spread the peach filling evenly over the crust in the pan.
- Sprinkle the remaining oat mixture evenly over the peach filling to create the topping.
- Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the bars cool completely in the pan on a wire rack before cutting into 12 bars.
Notes
You can use frozen peaches, but do not thaw them before using. Adjust baking time if needed. For a richer flavor, you can add a pinch of nutmeg to the topping mixture.
