Ingredients
  

For the Oats
  • 1/2 cup rolled oats
  • 1/2 cup milk dairy or non-dairy
  • 1/4 cup Greek yogurt plain
  • 1 tablespoon chia seeds
  • 1 teaspoon maple syrup or to taste
For the Peach Crisp Topping
  • 1/2 cup peaches fresh or frozen, diced
  • 1 tablespoon rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon butter melted

Method
 

  1. In a jar or container, combine the 1/2 cup rolled oats, 1/2 cup milk, 1/4 cup Greek yogurt, 1 tablespoon chia seeds, and 1 teaspoon maple syrup. Stir well to combine.
  2. In a separate small bowl, mix together the 1/2 cup diced peaches, 1 tablespoon rolled oats, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1 teaspoon melted butter.
  3. Pour the peach crisp topping mixture over the oat mixture in the jar. Seal the jar with a lid.
  4. Refrigerate for at least 8 hours, or overnight.
  5. Stir before serving. Enjoy cold.

Notes

You can adjust the sweetness to your preference. If using frozen peaches, you may not need to thaw them completely before dicing.
