Ingredients
  

For the Filling
  • 6 cups peeled, sliced peaches fresh or frozen
  • 3/4 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
For the Topping
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter cut into small pieces
  • 1/4 cup milk

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the sliced peaches, 3/4 cup brown sugar, 1/4 cup flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches.
  3. Pour the peach mixture into the prepared baking dish.
  4. In a separate bowl, whisk together 1 cup flour, 1/2 cup brown sugar, baking powder, and salt.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. Pour in the milk and stir until just combined. Do not overmix.
  7. Drop spoonfuls of the topping mixture over the peaches, spreading it evenly.
  8. Bake for 40-50 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let the cobbler cool for at least 10 minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream for an extra treat.
