Method
- Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large bowl, combine the sliced peaches, 3/4 cup brown sugar, 1/4 cup flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches.
- Pour the peach mixture into the prepared baking dish.
- In a separate bowl, whisk together 1 cup flour, 1/2 cup brown sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Pour in the milk and stir until just combined. Do not overmix.
- Drop spoonfuls of the topping mixture over the peaches, spreading it evenly.
- Bake for 40-50 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the cobbler cool for at least 10 minutes before serving.
