Method
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken thighs with 2 tablespoons of olive oil, salt, and pepper.
- Arrange the seasoned chicken on one side of a baking sheet.
- In the same bowl (no need to wash), toss the broccoli florets, sliced red bell pepper, and red onion wedges with 2 tablespoons of olive oil.
- Spread the vegetables on the other side of the baking sheet.
- In a small bowl, whisk together the lemon juice, 2 tablespoons of olive oil, minced garlic, dried oregano, and red pepper flakes (if using).
- Pour the lemon sauce evenly over the chicken and vegetables.
- Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
- Serve immediately.
Notes
You can add other vegetables like zucchini or cherry tomatoes. Ensure chicken is cooked to an internal temperature of 165°F (74°C).
