One-Pan Honey BBQ Chicken Rice

This is a simple one-pan meal with chicken, rice, and a honey BBQ sauce.

Ingredients
  

For the Chicken and Rice
  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 cup long-grain white rice uncooked
  • 1 cup chicken broth
  • 1/2 cup water
  • 1/4 cup red onion chopped
For the Honey BBQ Sauce
  • 1/2 cup BBQ sauce
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • salt and black pepper to taste
For Garnish
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small mixing bowl, whisk together the BBQ sauce, honey, soy sauce, and garlic powder. Season with salt and pepper and set it aside.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for 3-4 minutes until lightly browned.
  4. Add the uncooked rice and red onion. Cook for 1 minute, stirring until the rice is lightly toasted.
  5. Pour in the chicken broth and water. Bring the mixture to a simmer.
  6. Pour half of the honey BBQ sauce over the chicken and rice. Stir gently to combine.
  7. Cover the skillet and place it in the preheated oven. Bake for 20-25 minutes, until the liquid is absorbed and the rice is tender.
  8. Remove the skillet from the oven. Drizzle the remaining honey BBQ sauce over the top.
  9. Garnish with fresh parsley before you serve.

Notes
