- Preheat your oven to 400°F (200°C).
- In a small mixing bowl, whisk together the BBQ sauce, honey, soy sauce, and garlic powder. Season with salt and pepper and set it aside.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for 3-4 minutes until lightly browned.
- Add the uncooked rice and red onion. Cook for 1 minute, stirring until the rice is lightly toasted.
- Pour in the chicken broth and water. Bring the mixture to a simmer.
- Pour half of the honey BBQ sauce over the chicken and rice. Stir gently to combine.
- Cover the skillet and place it in the preheated oven. Bake for 20-25 minutes, until the liquid is absorbed and the rice is tender.
- Remove the skillet from the oven. Drizzle the remaining honey BBQ sauce over the top.
- Garnish with fresh parsley before you serve.
