One‑Pan Lemon Garlic Pasta (Ready in 20 Minutes)

Method
 

  1. Add 2 tbsp olive oil to a large pot or pan with high sides and heat over medium heat. Add garlic and cook for 2-3 minutes until softened.
  2. Add lemon zest, salt, black pepper, dried oregano, and red pepper flakes (if using).
  3. Stir in the pasta noodles and 4 cups of vegetable broth. Bring to a simmer over medium-high heat, then reduce heat to medium-low to maintain a simmer. Cook for 12-14 minutes, keeping the lid mostly on. Stir every 2 minutes to prevent sticking. If pasta needs more time, add 1/2 cup broth at a time.
  4. Once noodles are cooked and a small amount of liquid remains, stir in lemon juice, parmesan cheese, and 1 tbsp butter until a smooth sauce forms. Taste and adjust seasoning if needed.
  5. Top with shredded parmesan cheese, more lemon zest, and fresh basil. Serve immediately.

Notes

The cooking time for pasta can vary by brand. Check the pasta package for recommended cooking times. If you prefer a thinner sauce, you can add a little more vegetable broth or water.
