Mongolian Ground Beef Noodles

Ingredients
  

For the Sauce
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup water
  • 1/4 cup packed brown sugar
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
For the Noodles
  • 1 lb ground beef
  • 1 tbsp vegetable oil
  • 8 oz noodles such as ramen, udon, or spaghetti
  • 2 cloves garlic minced
  • 1 tsp ginger freshly grated
  • 2 green onions sliced, for garnish
  • 1 tsp sesame seeds for garnish

Method
 

  1. Cook the noodles according to package directions. Drain and set aside.
  2. In a small bowl, whisk together the soy sauce, water, brown sugar, cornstarch, and sesame oil. Set the sauce mixture aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  4. Add the minced garlic and grated ginger to the skillet. Cook for one minute until fragrant.
  5. Pour the sauce mixture over the beef. Bring to a simmer and cook for 2-3 minutes, stirring constantly, until the sauce has thickened.
  6. Add the cooked noodles to the skillet. Toss everything together until the noodles are fully coated in the sauce.
  7. Serve immediately, garnished with sliced green onions and sesame seeds.

Notes

You can add steamed or stir-fried vegetables like broccoli florets, sliced carrots, or bell peppers for more nutrients and texture. Add them to the skillet with the beef.
