Lemony Orzo Salad With Fresh Veggies

Ingredients
  

For the Salad
  • 8 ounces orzo pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
For the Dressing
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Equipment

  • Medium saucepan
  • Large mixing bowl
  • Whisk

Method
 

  1. Cook the orzo pasta according to package directions. Drain and rinse with cold water. Transfer to a large mixing bowl.
  2. Add the halved cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, and chopped fresh parsley to the bowl with the orzo.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper for the dressing.
  4. Pour the dressing over the orzo and vegetable mixture. Toss gently to combine.
  5. Serve immediately or chill for later.

Notes

You can add other vegetables like corn, peas, or chopped celery. Feta cheese or grilled chicken can also be added for extra flavor.
