- Cook the orzo pasta according to package directions. Drain and rinse with cold water. Transfer to a large mixing bowl.
- Add the halved cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, and chopped fresh parsley to the bowl with the orzo.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper for the dressing.
- Pour the dressing over the orzo and vegetable mixture. Toss gently to combine.
- Serve immediately or chill for later.
Notes
You can add other vegetables like corn, peas, or chopped celery. Feta cheese or grilled chicken can also be added for extra flavor.
