Chia Pudding
  • 1/4 cup chia seeds
  • 1/2 cup coconut milk
  • 3/4 cup cottage cheese Use at least 2% for creaminess
  • 1 lemon zest
  • 1/4 cup lemon juice Use fresh juice
  • 1 tbsp maple syrup or honey Adjust amount based on desired sweetness
  • 1 tsp vanilla extract
  • 1 pinch turmeric Optional, for color

Method
 

  1. Add the coconut milk, cottage cheese, maple syrup, vanilla, lemon juice, lemon zest, and turmeric to a high speed blender. Blend until the mixture is smooth.
  2. Pour the lemon cream mixture into a bowl and add the chia seeds. Mix together until everything is well combined.
  3. Cover the bowl and place it in the refrigerator to set for a minimum of 2 hours, or preferably overnight.
  4. Serve the pudding with your preferred toppings.
