Italian Grinder Salad Sandwich

This trending Italian Grinder Sandwich is a satisfying sub made with hoagie rolls, Italian meats, provolone and parmesan cheese, and a creamy, tangy grinder salad. This loaded sandwich recipe is hearty, fresh, and flavorful.

Ingredients
  

Grinder Salad
  • 1/2 cup mayonnaise
  • 1/2 head iceberg lettuce, shredded finely
  • 1/2 cup red onion, sliced thinly
  • 1/3 cup banana peppers, sliced
  • 1 tbsp red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp salt
  • to taste pepper
Sandwich
  • 3 sub rolls
  • 1/4 pound salami
  • 1/4 pound pepperoni
  • 1/4 pound turkey
  • 1/4 pound provolone cheese
  • 1 tomato, sliced
  • 1/3 cup parmesan cheese, grated

Equipment

  • Large bowl

Method
 

  1. Prepare the grinder salad. Add the mayonnaise, red wine vinegar, garlic powder, oregano, salt, and pepper to a large bowl. Whisk to combine.
  2. Add the lettuce, red onion, and banana peppers to the bowl. Combine thoroughly.
  3. Assemble the sandwiches. Divide the salami, pepperoni, and turkey among the rolls. Add the provolone cheese on top of the meats.
  4. Broil for 2 to 3 minutes until the cheese is melted and the meat is crisped up.
  5. Remove the subs from the oven. Add the tomato slices to the sandwiches. Season with salt and pepper.
  6. Add a generous amount of grinder salad to each of the sandwiches. Top with parmesan cheese.
  7. Close the sandwiches, cut in half, and serve.

Notes

I developed this version of the Italian Grinder Salad Sandwich after my youngest son was diagnosed with celiac disease. I experimented with fresh produce and gluten-free bread to recreate the flavors I remembered from the deli. This recipe satisfies my family’s cravings and shows that any dish can be enjoyed, regardless of dietary limitations.
