- Preheat your oven to 325°F (163°C).
- In a medium-sized bowl, combine the old fashioned oats, almonds, pecans, chia seeds, cinnamon, and salt. Mix until combined.
- Add the melted coconut oil, maple syrup, and brown sugar to the bowl. Stir very well. Do not add the dried cranberries yet.
- Spread the mixture evenly on a large rimmed baking sheet. A rim helps prevent granola from falling off during stirring.
- Bake for 10 minutes on the middle rack. Remove the granola and stir it. If you want chunkier granola, press down firmly with the back of a large spoon or spatula. Bake for another 12-16 minutes, or until the edges are lightly golden. Your granola will crisp up more as it cools.
- Allow the granola to rest for 30 minutes to form clusters. Gently sprinkle in the dried cranberries.
- Enjoy! This granola can be stored in an airtight container on the countertop for up to 7 days.
