High-Protein Chicken Ranch Quesadilla

This recipe provides a quick, protein-rich meal perfect for busy families. It uses simple ingredients to create a satisfying quesadilla that appeals to both adults and children.

Ingredients

  • 1 lb Ground Chicken (97/3)
  • 6 slices Bacon, cut into strips
  • 2 Tbsp Ranch Seasoning
  • 8 oz Cheddar, shredded
  • 8 count Tortillas (6" Carb Balance recommended)

  • Paper towel
  • Spatula
  • Large griddle

Method
 

  1. Cook the bacon in a large skillet over medium-high heat. Transfer the cooked bacon to a paper towel and drain the remaining grease from the skillet.
  2. Add the ground chicken to the skillet and cook until no pink remains.
  3. Add the ranch seasoning and the cooked bacon pieces back to the ground chicken. Stir well until the seasoning is fully mixed in. Transfer the ground chicken mixture to a bowl and set it aside.
  4. Place the same skillet or a large griddle over medium-low to medium heat. Spray lightly with cooking spray and add one or two tortillas.
  5. Place 2 tablespoons (14g) of cheese on one half of each tortilla. Top the cheese with about 40-45g of the ground chicken mixture, and then add another 2 tablespoons of cheese.
  6. Use a spatula to gently fold the tortilla in half. Hold the top half closed for a few seconds to help the top layer of cheese melt. Cook for another 1 to 2 minutes per side until the tortilla is golden brown. Reduce the heat if the tortillas brown too fast.

Notes

You can substitute the chicken filling with other options like Crispy Pork Tenderloin Carnitas or Shredded Buffalo Chicken. Each quesadilla contains 7 WW SmartPoints on the blue plan.
