  • 1 3/4 cups White whole wheat flour
  • 1 tsp. Baking soda
  • 1/2 tsp. Salt
  • 1 tsp. Cinnamon
Wet Ingredients
  • 1 1/3 cup Mashed ripe bananas about 3 large bananas
  • 2 Eggs whisked + room temperature
  • 1/2 cup Coconut oil melted
  • 1/2 cup Maple syrup
  • 1 tsp. Vanilla extract
Mix-ins
  • 3/4 cup Chocolate chips with more for topping

Method
 

  1. Preheat your oven to 350F (175C). Prepare a 9x5 inch loaf pan by greasing it.
  2. In a small bowl, combine the flour, baking soda, salt, and cinnamon. Set this mixture aside.
  3. In a large bowl, whisk together the mashed bananas and whisked eggs until they are well combined.
  4. Stir in the melted coconut oil, maple syrup, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
  6. Fold in any desired mix-ins, such as chocolate chips or nuts.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
