- Preheat your oven to 350F (175C). Prepare a 9x5 inch loaf pan by greasing it.
- In a small bowl, combine the flour, baking soda, salt, and cinnamon. Set this mixture aside.
- In a large bowl, whisk together the mashed bananas and whisked eggs until they are well combined.
- Stir in the melted coconut oil, maple syrup, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
- Fold in any desired mix-ins, such as chocolate chips or nuts.
- Pour the batter into the prepared loaf pan.
- Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
