Ingredients
  

For the Sweet Potatoes
  • 4.5 cups cubed sweet potatoes (about 1 1/2 pounds)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cinnamon
For the Beef and Assembly
  • 1 pound lean ground beef
  • 1 Tablespoon tomato paste
  • 1 Tablespoon taco seasoning
  • 2 cups low-fat cottage cheese
  • 1 large avocado (or 2 small) sliced
  • 4 Tablespoons hot honey for drizzling

Method
 

  1. Preheat the oven to 425 degrees F.
  2. Add the cubed sweet potatoes to a large baking sheet and spray with avocado oil.
  3. Add salt, pepper, and cinnamon, then mix to coat the potatoes evenly.
  4. Roast the sweet potatoes for 30 minutes, flipping them halfway through the cooking time.
  5. While the potatoes roast, cook the ground beef with the taco seasoning and tomato paste in a large skillet over medium-high heat.
  6. Assemble each bowl with roasted sweet potatoes, cooked ground beef, cottage cheese, avocado slices, and a drizzle of hot honey.
